What you need
fresh tomatoes

tsp table salt

cup shredded mozzarella

tbsp balsamic vinegar

clove garlic clove

cup fresh basil
boneless chicken breast
Instructions
Preheat oven to 375 degrees Fahrenheit and lightly grease a 13 x 9-inch baking dish with cooking spray. Chop the tomatoes into small pieces and combine in a large bowl with chopped garlic and basil. Toss the tomato, basil, and garlic mixture with the balsamic vinegar and half (1/4 teaspoon) of the salt and pepper. Place the chicken breasts in the baking dish and sprinkle with the remaining salt and pepper. Pour the tomato mixture over the chicken breasts and spread evenly with a spatula. Top with mozzarella cheese. Bake for 35-45 minutes or until the chicken is entirely cooked through and no longer pink on the inside. Optional: Garnish with fresh basil and drizzle with balsamic vinegar.View original recipe
