Easy One Pot Lasagna Soup

If any recipe feels like fall I feel like this would be it!! 🍁🍂 This easy one pot lasagna soup is perfect for a busy weeknight and is also a great idea to serve a crowd. This recipe is pure comfort and always a big hit!! Note: I used crushed lasagna noodles this time but I think Mafalda noodles makes it appear to look more like a “soup”.

What you need
lb lean ground beef

oz pasta sauce

cup shredded mexican cheese blend
tbsp dried italian seasoning

tsp pepper

yellow onion

tbsp garlic

cup beef broth

cup heavy cream

cup mozzarella cheese

oz tomato

tbsp cooking oil

oz noodles
Instructions
1. Heat dutch oven over medium-high heat. Add in oil and then chopped onion. Cook for 3-4 minutes or until partly translucent. Add in garlic and cook for 1 minute. 2. Add in ground beef and sprinkle with Italian seasoning, salt, and pepper. Cook until browned, stirring occasionally. 3. (If necessary, drain) 4. Pour in pasta sauce, 4 cups beef broth, crushed tomatoes, and stir to combine. 5. Add in Mafalda noodles and allow soup to simmer for 8 minutes, or until noodles are al dente. 6.
