What you need

russet potato

tsp dried basil

cup carrot

tsp black pepper

cup milk

white onion
lb lean ground beef

tsp salt

cup chicken broth

cup all purpose flour

bunch green onion

tsp dried parsley

slice bacon

cup shredded cheddar
Instructions
1. Place peeled and diced potatoes, chopped onions, shredded carrots, dried basil and parsley in a large crock pot. Pour chicken broth over the vegetables. 2. Next, add cooked ground beef and chopped cooked bacon to the crock pot. Cover with a lid. Cook on low heat for 6 to 8 hours OR on high heat for 4 to 5 hours, or until the potatoes are tender. 3. Approximately 45 minutes before serving, melt butter in a large skillet. Once the butter is melted, whisk in the all-purpose flour and cook until it turns golden brown and bubbly (about 1 minute.) Whisk in the milk, salt, and pepper. Pour this mixture into the crock pot and stir to combine everything. 4. Add the shredded pepper jack cheese (or cheddar cheese) to the crock pot. Stir again. Cover with the lid and cook for another 20 minutes or until the cheese is completely melted. Garnish with extra cheese and chopped green onion! Enjoy!View original recipe
