What you need

cup butter

cup granulated sugar

tsp cinnamon powder

tsp baking powder

tsp table salt

tsp vanilla extract

cup all purpose flour

oz cream cheese

lb powdered sugar

cup brown sugar

Instructions
For the cookies: 1. Grate or chop 2 cups of raw carrots. 2. Add dry ingredients (flour, cinnamon, baking powder, baking soda, salt) to a bowl and whisk together until combined. 3. In a separate bowl, add the softened butter, granulated sugar, and brown sugar and mix until light and fluffy. Then add eggs and vanilla extract and mix until combined. 4. Fold in the 2 cups of grated carrots into the wet mixture. 5. Combine the wet and dry ingredients. 6. Bake the cookies in an oven preheated to 375 degrees Fahrenheit for 13-15 minutes or until golden brown around the edges. 7. Allow cookies to cool completely before frosting. For the cream cheese frosting: 1. Add the slightly softened butter, softened cream cheese, and vanilla extract to a mixing bowl. 2. Mix the cream cheese, butter, and vanilla together on medium speed until thoroughly combined (about 2 minutes). 3. Slowly add in the powdered sugar, one cup at a time.
