Perfect for a summer barbecue, Labor Day Party, or any other day of the year, this Mexican street corn pasta salad recipe is like nothing you have ever tasted. This delicious recipe is easy and fast with very little prep time.

Dressing: 1. In a medium bowl or large cup, combine sour cream, mayonnaise, 2 tablespoons olive oil, chili powder, garlic powder, cayenne pepper, lime zest and juice, and a couple large pinches of salt and pepper. Pasta Salad: 1. Cook pasta according to package directions until al dente. Toss with 2 teaspoons olive oil, salt, and pepper and set aside to cool to room temperature. You may pop it in the fridge to speed up the cooling process. 2. Add the cooled pasta, cooked corn, crumbled Cotija or queso fresco, and â…“ cup chopped cilantro to a large bowl. 3. Pour most of the prepared dressing over the pasta mixture and toss until everything is well coated. 4. Transfer the pasta salad to a serving platter, drizzle with the remaining dressing, and garnish with fresh chopped cilantro.
