Pour two cups of champagne into the large saucepan. Stir in 1/2 cup simple syrup and 1 teaspoon lemon juice. Sprinkle both packets of unflavored gelatin packets over champagne mixture and allow it to sit for 3-5 minutes. Heat saucepan on medium heat until the gelatin is completely dissolved. Remove from heat and allow the mixture to cool for 3-5 minutes. Pour the remaining champagne and Ginger Ale over mixture and stir evenly. Lightly grease 13 x 9-inch pan and pour mixture in. Allow to set completely, either several hours or overnight. Cut into small squares and place on serving platter.
